Weaning Wednesday – Curry

C U R R Y – This is my go to leftover roast chicken meal! It takes 15 mins to cook, so a great family mid week dinner!

Ingredients

1 onion

3 medium sweet potatoes (peeled and chopped)

1 tbsp of mild curry powder (medium if you prefer a spicier taste)

1 tin of chopped tomatoes

1 carton of coconut cream (coconut milk will work too but it will be a little runny, so add 2 tbsp of red lentils to thicken)

1 chicken stock cube

Spinach

How to make it

Chop and fry an onion, add 3 medium sweet potatoes (peeled and chopped).

Add a tbsp of mild curry powder (medium if you prefer a spicier taste) and coat all the potato.

Add 1 tin of chopped tomatoes and a carton of coconut cream (coconut milk will work too but it will be a little runny, so add 2 tbsp of red lentils to thicken).

Add a chicken stock cube.

Bring to the boil and simmer for 15 mins (or until the potato is soft).

Chop up your left over chicken and add to the pan along with a handful of spinach.

Serve with rice!
