Simple Pancakes – anytime
The easiest ‘go to’ recipe for pancakes! Mash one banana and mix into one whisked egg! Simple!
Serve with fruit and yogurt

Yet another excellent recipe from @mimis.bowl – this time pancakes with puréed sweet potato mixed in! We made ours dairy free with @alpro oat milk and also whizzed in some leftover broccoli too!

Wow I never thought these would be as popular as they were! The girls couldn’t get enough at snack time! (1 egg, 1 mashed banana, 2 tbsp flour & 1 tbsp any milk – I used oat) but then I just dropped a tsp of the mixture into the pan to make little bite sized children’s pancakes! I will have to do these regularly!

Vegan pancakes! These can also be gluten free or dairy free too!
You need 1 cup of flour (any flour of your choice – I used oat flour after blending quaker porridge oats in my Nutri Bullet, 1 cup plant based yogurt (I used plain soya), 1 cup plant based milk (I used oat) and 1 tsp baking powder.
These come out really well. American style consistency but crepe flavour.


In a large mixing bowl, create a well with flour then add eggs, slowly whisking them into flour. Add sugar and salt and stir until combined. Gradually add the milk, whisking to combine. Let batter stand at room temperature until bubbly on top, 15 to 20 minutes

For when it’s finally here! and you can enjoy your pancakes for breakfast, lunch and dinner. These pancake are simple crepes to fill with your favourite things! Why not start off savoury with ham, cheese, avocado and spinach! Then move onto berries and chocolate spread!

- 125 g plain flour
- 2 large eggs
- 1 tbsp. caster sugar
- 1/4 tsp. salt
- 360 ml milk (any kind)
- 1 tbsp. butter (for cooking)
