
Weaning Wednesday – Roasted Veg with Cod
Today we wanted to share a quick and easy recipe that can be used to introduce fish to your baby for the first time, and also be enjoyed by the whole family for years to come!


Recipe:
4 large tomatoes
1 courgette
1 yellow pepper
Fillet of white fish (cod or haddock)
Dried or fresh thyme
Dried or fresh basil
Drizzle of olive oil
How to make it
Chop the vegetables into strips and place in a tray. Pop the fillet of fish on top. Drizzle with olive oil and a pinch of thyme and basil. Cover with foil and place in the over for 30 minutes at 160 degrees.
For babies weaning on purées
Once cooked, place the cooked food into a food processor and blitz until happy with the consistency. Save a few pieces of pepper and courgette for finger food!
For baby led weaning
Flake the fish onto a plate or your child’s tray and serve with the strips of roasted vegetables.
(Score a cross on the bottom of the skin of the tomato, plunge into boiling water for 1 minute and then into cold water. This should make the skin easier to remove!)
* Tomatoes can be an allergen food. If you have not given them to your child yet, remove the skin and de-seed the tomato.
